We opened Padella Borough Market in 2016, right at the entrance of London’s most important food market. An open kitchen on the ground floor, with pasta rolled in the window in the mornings, we wanted the authenticity of what we do to be on view to everyone who walked by. Inspired by our visits to neighbourhood and community canteens in Italy, where good food and especially pasta was affordable and delicious, and where businessmen rubbed shoulders at the counter with tradesman and school kids. Padella created a revolution in affordable and authentic Italian food in London and inspired a fresh wave of pasta restaurants, and we like to think it still leads the way.
We took our 400 favourite pasta dishes from the menu at Trullo (our first restaurant), and spent the first year at Padella Borough Market distilling it down to 40 classics that come on and off the menu throughout the year.
