Padella was London’s pioneering fresh pasta concept when it opened in Borough Market in 2016, focusing on high quality, seasonal recipes and techniques developed at Tim & Jordan’s first restaurant, Trullo, and at St John, the River Cafe and Moro, where they trained.
We’re still leading the field in our love for traditional Italian pasta; the kind you eat in people’s homes and in the best trattorias in Italy, while using a combination of the best quality and high welfare italian and British seasonal ingredients.
We believe in unearthing and developing the most talented Back of House professionals in a friendly and supportive environment that prizes product knowledge and staff welfare above everything else. Intermediate and Advanced level WSET Training is included for Production Chef de Parties.
